A Spicy a Meatball Sub

It is crazy to say that it is even to hot outside to grill.  So when all else fails…make it sub night.  Or where I come from, grinder night.

Ingredients:

  • 1 pound ground beef (I use the leanest I can get)
  • 1 egg
  • 1/2 cup Italian breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper (I like them spicy)
  • 1 can crushed tomatoes
  • 2 tbsp basil
  • 1 tsp oregano
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 4 sub rolls
  • fresh Parmesan
  • 1/2 cup mozzarella cheese, shredded

Preheat oven to 400 degrees.  Mix first five ingredients with hands.  Making sure it is thoroughly mixed.  Use a baking sheet or a muffin tin and spray with cooking spray.  Form meatballs what ever size you prefer.  I make mine smaller for subs and they cook quicker as well.  Place on baking sheet or each meatball in a muffin cup.  Bake for 15-20 minutes until browned.

While baking, make a quick marinara.  Ina dutch oven or saucepan, heat olive oil and add garlic, oregano and basil.  Saute for a couple of minutes.  Add tomatoes and bring to a simmer for o 10 minutes.  Set to low and simmer, the longer it cooks..they better it will taste.

Mix meatballs with sauce and add into some really good sub rolls. (Hint:  we love to go and buy Jimmy John’s day old rolls for $.50!!!)

Add some mozzarella and fresh parm and put under the broiler for a minute.  Manga!
