Pineapple Black Bean Salsa

Salsa is such a quick, easy and healthy snack that is just so much better made from scratch.  You control the sodium and you get to pick your favorite ingredients to your liking.  I love me some pineapple and I have a little left over, add some beans, jalapeno and spices and your done.

I serve mine over grilled chicken and rice.  But it is just as good with some good tortillas or fish tacos!

Pineapple Black Bean Salsa:

  • 1 cup diced fresh pineapple
  • 1 can rinsed & drained black beans
  • 1 jalapeno, minced
  • 1 clove, garlic
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 cup cherry tomatoes, diced
  • 3 tbsp chopped cilantro

Mix all ingredients together and serve.
